How to Make Pumpkin Spice Syrup for Coffee

Fall is almost here, which means cooler weather, cozy blankets, and a shift in flavors from summer.

Lemon iced tea is out and pumpkin spice is in. Everyone's favorite fall flavor is back, and one of the best ways to enjoy it is in your morning cup of coffee. Pumpkin spice flavor syrups are a great way to do that.

What Ingredients Do You Need?

Pumpkin Puree

The key to the best pumpkin spice syrup for coffee is high-quality ingredients–this means using real pumpkin. Of course, growing a pumpkin for six months in your backyard just for artisanal pumpkin spice sauce isn't for everyone, so feel free to use a store-bought pumpkin! 

First, remove the seeds and skin. Dice the pumpkin into small cubes, boil until they are soft, and mash them like you’re making mashed potatoes. Now, you have real pumpkin puree. If you want to save on time, store-bought pumpkin puree works just as well. 

The Spice Must Flow

The next step is making the perfect pumpkin pie spice. With this recipe, you can mimic Starbucks' most popular fall drink and many other pumpkin-flavored treats. 

Mix the powdered ingredients below. This should make enough spice to last all fall.  

  • Three tablespoons of ground cinnamon
  • 1.5 teaspoons of ground ginger
  • Two teaspoons nutmeg
  • One-half teaspoon of ground allspice
  • 1.5 teaspoons of ground cloves

If you're short on time, store-bought pumpkin pie spice can work as an alternative. Each brand varies, so experiment to find your favorite. 

Condensed Milk

No fancy recipe here, a can of good old-fashioned off-the-shelf can is exactly what we want. 

Simple Syrup

This is where the recipe gets yummy, but we also start to add in some calories, so enjoy this pumpkin spice syrup sparingly!

  • One-half cup of sugar
  • One-half cup of water

Over medium heat, stir the water and sugar until the mixture sticks to the spoon but still runs off. It will thicken as it cools.


Using a whisk or wooden spoon, slowly blend fourteen ounces of condensed milk with the simple syrup. Add one teaspoon of the spice mix and stir over low to medium heat until fully mixed.

Finally, add two-thirds of a cup of pumpkin puree. Keep stirring on low heat until it starts to bubble. Let it cool, and you’ll have the flavor of fall in a handy syrup, ready to be added to your coffee or any other dish you want to spice up.
